Williams & Humbert make this organic vintage Fino in Jerez from Palomino on albariza chalk. It spends 36 months in American oak under a veil of flor yeast, giving toasted almond, fresh bread yeast and a saline, bone dry finish.
Description
Williams & Humbert is one of the oldest houses in Jerez, founded in 1877 and involved in establishing the sherry denomination. This organic Fino is made from Palomino grown on the albariza soils around Jerez de la Frontera, the porous white chalk that holds winter rain deep in the subsoil and reflects the Andalusian sun to ripen the fruit. The base wine is fortified to around 15.5 percent and aged for 36 months in American oak butts under a living film of flor yeast. The flor seals the wine from oxygen and feeds on alcohol and glycerine, releasing acetaldehyde and stripping the wine to a sharp, savoury core while drawing out almond and yeasty bread aromas. The colour is pale straw. The nose is clean and pointed, with toasted almond, fresh dough and dried herbs. The palate is bone dry and saline, with green apple acidity and a brisk, mineral finish that reflects the chalk. Serve well chilled at 7 to 9 degrees in a white wine glass, ideally fresh from a recently opened bottle. It is built for the table, particularly fried fish, prawns and salted almonds.
