Wild Wombat carries a taste of the Australian outback to European bars, distilled from Australian wheat and cut with fresh Australian spring water through a modern multi-column still that lends it real clarity and smoothness. Eleven botanicals shape the profile: juniper, lemon myrtle, apple, cassia, orange, coriander seed, angelica root, cinnamon, clove, nutmeg and cardamom. The maker has a conscience too, donating a share of every bottle to wombat protection.
The nose is mild and fruity-fresh, citrus and orchard fruit to the fore. The palate is more complex than its gentleness suggests, fresh citrus flavours lifted by lemon myrtle and a backdrop of warm baking spice from cassia, cinnamon and nutmeg. The finish is long and smooth. Serve it simply, a generous G&T with a wedge of fresh apple and a strip of orange peel.
