Wild Shot Mezcal Silver is a joven made from 100 percent Salmiana, the large central Mexican agave known as the green giant that can take up to 25 years to mature, with roots in the highlands of Coahuila, Durango and San Luis Potosi. The brand was founded by the late American country singer Toby Keith, and each bottle carries a gusano, the larva added in the bottling that, honestly, is a commercial custom rather than any mark of quality.
The Salmiana gives a distinctly green, vegetal character, and the spirit shows strong notes of fresh greenery and citrus with a little fruit sweetness over the smoke of mesquite wood used in the underground roast. The palate is raw green agave in its purest form, with citrus and further fruit. Bottled at 43.4 percent, it leans rustic and herbaceous, a clear window onto a species that is rarely distilled on its own.
