Description
Weingut am Schlipf Schneider is a family estate in Baden, southwest Germany, run by Johannes and Christoph Schneider on vineyards dating back to 1892. This Spätburgunder, the German name for Pinot Noir, comes from limestone soils, reflected in the name Vom Kalkstein, meaning from the limestone. Baden is Germany's warmest wine region, which lets this thin-skinned grape ripen, while the limestone keeps the wine fresh and gives it a mineral backbone. Farming is organic, with manual harvests, low yields and minimal intervention. The wine is aged for 18 months on its lees, where the spent yeast cells slowly break down and release compounds that add texture, roundness and a savoury depth while protecting the wine from oxygen. The colour is a translucent ruby, typical of Pinot Noir. The nose shows red berries, cherry and red currant with an earthy, herbal edge and a floral rose note. The palate is medium bodied and elegant, with fine silky tannins, bright acidity and a long savoury finish. Serve at 14 to 16 degrees. It suits duck, roast chicken, mushroom dishes and nutty cheeses.
