Waterkloof White Circle of Life 2024

Circle of Life White comes from Waterkloof Estate, a biodynamic and organic property in Stellenbosch, in South Africa's Coastal Region. Rather than a single grape or plot, the wine is drawn from the estate's varied slopes, soils and elevations, a natural amphitheatre sitting between roughly 200 and 350 metres above sea level and exposed to the cold winds coming in off False Bay. That elevation and maritime cooling slow ripening and preserve acidity, which is what gives the wine its tension. Sauvignon Blanc brings citrus and cut herb aromatics, Chenin Blanc adds body and orchard fruit, and Semillon lends a waxy weight and ageing potential. Biodynamic farming and minimal intervention in the cellar keep the emphasis on site rather than winemaking, with no new oak to mask the fruit. Expect a pale straw colour, a nose of lemon, green apple and pear with an elderflower lift, and a dry, textured palate that closes on a stony, saline note. Serve at 9 to 11 degrees in a white glass.
