Description
Waterkloof is a family-run South African estate established by Paul Boutinot in 2004, farming organically on the cool, wind-exposed slopes of the Schapenberg in Helderberg, around 300 metres above sea level and a few kilometres from False Bay. The proximity to the ocean and the constant maritime breezes moderate the Stellenbosch heat, slowing ripening and keeping acidity firm, which suits a single-variety Mourvedre rosé. The grapes are pressed gently, then the wine spends six months on its fine lees in barrel. This extended lees contact releases mannoproteins that build texture and a subtle savoury depth, while the older barrels add structure without obvious oak flavour. The result is a rosé built for the table rather than the poolside. It pours a pale salmon pink. The nose shows red berry, white peach and citrus peel with a herbal, almost waxy edge. The palate is dry and textured, the stone and red fruit carried by saline freshness, a dried-herb note and a faint almond character from the lees. It finishes long and savoury. Serve at 10 to 12 degrees.
