Waterford Wilkinstown: Edition 1.1

Wilkinstown 1.1 is the Netherlands exclusive release in Waterford's market allocation programme, part of a 2021 initiative that gave five European markets their own dedicated Single Farm Origin to follow over successive editions. The barley was grown by Ger Kelly at Wilkinstown, one of the farms that would later contribute to the Racines Micro Cuvée. Bottled in 2021 with an outturn of 5,000 bottles for the Dutch market. Every bottle carries the TÉIREOIR code that links back to the specific field, soil analysis and cask records for the release.

Maturation combined first fill American oak, virgin American oak and premium French oak. First fill Bourbon contributes vanillin and coconut lactones through the charred inner wood. Virgin American oak adds toasted sugar and raw lignin derived spice. French oak delivers finer grained tannins with clove phenolics. The tighter cask profile without Vin Doux Naturel keeps the grain character forward. Bottled at 50% without chill filtration or added colour.
