Knockroe 1.1 is a South Africa market exclusive Single Farm Origin from Waterford, one of two releases allocated to the South African market alongside Cooladine 1.1. Distilled in 2016 and bottled in November 2020, the release produced 5,093 bottles. Market exclusive releases like this allow individual markets to follow their dedicated Waterford terroir over successive editions, part of the distillery's wider thesis that soil, microclimate and farming practice leave a measurable signature in the final spirit. Every bottle carries the TÉIREOIR code linking to the specific field and cask records.
Maturation combined first fill American oak, premium French oak and Vin Doux Naturel casks. First fill Bourbon contributes vanillin and coconut lactones through the charred inner wood. French oak delivers finer grained tannins with clove phenolics. The Vin Doux Naturel casks, previously used for fortified sweet wines from southern France, add oxidised fruit esters and concentrated sweetness. The absence of virgin American oak gives this release a cleaner wood signature, with vanillin and fruit forward rather than heavy toasted sugar notes. Bottled at 50% without chill filtration or added colour.
