Description
Gaia 1.2 is the second release of Waterford's certified organic single malt, the follow up to the industry first Gaia 1.1 within the distillery's Arcadian Series. Certified by the Organic Trust, the whisky is produced from organic Irish barley harvested in 2016. This particular edition was bottled for the Swedish market in 2020 with an outturn of 4,000 bottles. Every bottle carries the TÉIREOIR code that links back to the participating organic farms and cask records.
The Arcadian Series exists to showcase barley grown under alternative farming philosophies, including organic, biodynamic and heritage grain varieties. Maturation used the Waterford standard combination of first fill Bourbon, virgin American oak, premium French oak and Vin Doux Naturel casks. First fill Bourbon delivers vanillin and coconut lactones. Virgin American oak contributes toasted sugar and raw lignin spice. French oak brings finer grained tannins and clove phenolics. The Vin Doux Naturel casks, previously holding fortified sweet wines from southern France, add oxidised fruit esters and concentrated sweetness. Bottled at 50% without chill filtration or added colour.
