Waipara Springs is a family estate in the Waipara Valley, in the Canterbury region of New Zealand's South Island. The Moore and Grant families planted the first vines here in the 1980s, and the winery is now run by the third generation. Waipara sits in the rain shadow of the Teviotdale hills, which shelter the valley and give warm days followed by cold nights. That wide diurnal range slows ripening and locks in the bright acidity and aromatic intensity that mark cool climate New Zealand Sauvignon Blanc. The soils are a mix of free draining gravels and clay limestone, which keep the vines in check and add a mineral thread to the wine. Farmed organically, the fruit is fermented cool and rested on its fine lees to gain a little more texture and weight on the palate. In the glass it is pale and bright, with passionfruit, lime, green apple and a fresh herbal note. The palate is crisp and dry, with a clean, citrus driven finish. Serve well chilled at 8 to 10 degrees.
