Malahierba makes this organic white from Rufete Blanco, a rare grape of the Sierra de Salamanca. Eighteen months in barrel give a deep, textured white with white peach, hazelnut and honey over a toasted, savoury weight.

Description
Malahierba farms organically in the Sierra de Salamanca, a small mountain appellation in the west of Castilla y León worked on steep granite and slate slopes. The grape is Rufete Blanco, a rare local variety usually seen in tiny quantities, grown here at altitude where cool nights and poor stony soils give concentrated fruit and fresh acidity. The wine is aged for a long eighteen months in barrel, an extended élevage during which it rests on its lees. As the yeast cells slowly break down they release mannoproteins that build a broad, creamy texture, while the porous oak allows a measured oxygen exchange that develops nutty, toasted complexity and softens the wine without stripping its freshness. The colour is deep gold. The nose is layered, with white peach and pear over hazelnut, honey and toasted bread. The palate is full and textured, the long barrel ageing lending a savoury, nutty depth to ripe orchard fruit, closing dry and long. Serve at 11 to 13 degrees in a large glass.

Serve with roast chicken or richer fish such as baked salmon or monkfish, where the barrel weight and nutty depth meet the richness. It also works with roasted root vegetables and hard nutty cheeses.
