Virgen del Galir make this rare still white from Palomino grown on the slate and granite soils of Valdeorras in Galicia. Twelve months of ageing gives a saline, mineral wine with lemon, green apple and brine.

Description
Virgen del Galir works in Valdeorras, the inland Galician appellation where the Sil valley cuts through steep hillsides of slate and granite. Palomino is best known as the base of Sherry, but grown here as a still dry white on poor rocky soils it takes a very different form. The Atlantic influence and cool nights keep acidity high, while the schistose soils lend a firm mineral thread. This bottling spends 24 months in separate containers before release, a long élevage that adds texture and breadth without covering the fruit. The result is a wine of quiet precision rather than power. The colour is pale gold. The nose is restrained, with lemon, green apple and white flowers lifted by a clear saline edge. The palate is dry and mineral, carried by bright acidity and a saltiness that runs into a clean finish. Alcohol is low at 11.5 percent, keeping it light on its feet. Serve well chilled at 9 to 11 degrees.
