Description
Vinas Mora is a minimal-intervention project built to rescue the growers' cooperative at Primosten, on the Dalmatian coast near Split. Kaamen III is made from Babic, the indigenous variety of these stony hillsides. The vines grow in pockets of red soil among fractured karst limestone, a poor, free-draining terroir that limits yields and concentrates the fruit, while the maritime climate and sea breezes keep the acidity firm and lend a saline edge. Farming is organic and the wine is made with little intervention. Ageing runs twelve months in neutral oak, chosen so the barrel softens the tannins and lets in a little oxygen without overlaying the wine with vanilla or toast, leaving the variety and the site to speak. Expect an intense cherry-red colour and a nose of dark cherry, plum and dried Mediterranean herbs, with earth and a stony, savoury character on the palate. Tannins are present and slightly rustic, the finish dry and mineral. Serve at 16C. It pairs well with grilled red meats, lamb and aged hard cheese.
