Description
Viña Encina Rosado is a kosher rosé from D.O. La Mancha, made by Elvi Wines entirely from Syrah. La Mancha is a high, dry plateau in central Spain with a continental climate of hot days and cool nights, which ripens Syrah fully while the altitude preserves the acidity that keeps the wine fresh. After harvest the grapes rest, then macerate on their skins for two to three hours to draw out colour, giving the wine its deeper pink hue. Fermentation follows for ten to fifteen days at a controlled 12 to 14 degrees, a cool ferment that maximises colour and aroma extraction while protecting the primary fruit, with no oak so the Syrah character stays to the front. The wine is a vivid pink. The nose is fruit driven, with ripe red berries, cherry and plum over a peppery, faintly floral note typical of Syrah. The palate is rounded and generous, the ripe fruit balanced by fresh acidity into a clean, savoury finish. Made to kosher requirements, it remains a straightforward, food-friendly rosado. Serve at 9 to 11 degrees. It suits grilled meats, richer fish and tomato dishes.
