Description
Villa Conchi produces this Cava in the Penedes region of Spain, using the traditional method with the second fermentation taking place in the bottle. The cuvee blends the three classic Cava grapes, Macabeo, Xarel·lo and Parellada, with around a tenth Chardonnay for freshness and lift. Ageing on the lees builds the fine, creamy bead and a light yeasty layer beneath the fruit, in the same way as the classic method regions. The Brut dosage keeps the finish dry and clean, with the wine bottled under natural cork to preserve its freshness.
The colour is bright, shining yellow with a persistent perlage. The nose is fresh and fruity, with green apple, citrus and peach lifted by white flowers and a slight hint of yeast. The palate is fresh, lively and well structured, with a fine bead, pleasant acidity, a touch of almond and a long, harmonious finish. Serve well chilled at around 6 to 8 degrees. It works as an aperitif and alongside seafood, grilled fish and tapas.
