Description
Rey Fernando de Castilla works in Jerez, in Andalusia, and this white vermouth is built on a base of Palomino Fino and Moscatel de Alejandría, the two grapes of the Marco de Jerez. Palomino is the backbone of dry sherry and brings a neutral, saline frame, while Moscatel adds the grapey, floral aromatics and a touch of sweetness. The vineyards sit on chalky albariza soils under a hot Andalusian climate moderated by Atlantic winds. The base is aromatised by macerating wormwood and a set of herbs and spices, drawing their bitter and aromatic compounds into the blend, which is left semi-sweet. The colour is pale gold. The nose is fruity, with clear Muscat grape and spice. The palate is semi-sweet, intense and long, carrying flavours of wormwood, clove and thyme over a soft honeyed fruit, the bitterness keeping it balanced. Serve well chilled over ice with an orange twist as an aperitif. It also suits charcuterie, hard, nutty cheese and grilled white fish.
