Description
Antonio Benedetto Carpano, a distiller and herbalist working in Turin, created the formula in 1786 that is taken as the origin of modern vermouth. Antica Formula follows that recipe and remains the reference for the rich Italian rosso style. The base is a white wine, fortified and aromatised by maceration with wormwood and a broad set of botanicals, roots, barks, spices and citrus, whose bitter and aromatic compounds are extracted into the wine and spirit before generous sweetening and a period of resting that rounds the texture. The colour is deep amber to mahogany. The nose offers warm spice, citrus and nuts with a clear note of vanilla. The palate is round, full and sweet, the vanilla and dried fruit set against clove, cinnamon and a firm wormwood bitterness, the finish long and gently bitter. Serve over ice with an orange twist as an aperitif, or neat at cool room temperature after a meal. It pairs with charcuterie and hard, nutty cheese, and the sweet, spiced weight also suits dark chocolate and caramel desserts.
