Carpano Classico carries the name of Antonio Benedetto Carpano, the Turin distiller credited in 1786 with the modern vermouth formula. A wine base infused with dried herbs, sweet spice and candied fruit gives a round palate balancing acidity against measured bitterness.
Description
Vermouth Carpano Classico comes from the Carpano house of Turin, whose founder Antonio Benedetto Carpano is credited with shaping the modern vermouth category in Piedmont. Wormwood, the herb that gives vermouth its name through the German wermutkraut, has flavoured wine since antiquity, but Carpano's formula set the template for the aromatised wines made today. The Classico is built on a wine base that is fortified, sweetened and infused with a wide botanical mix of dried aromatic herbs, sweet spices, roots and bittering wormwood. Slow maceration and blending knit the elements together so the sweetness, acidity and bitterness sit in balance rather than one running ahead. The colour is deep amber to red. The nose leads with dried aromatic herbs over sweet spice, candied fruit and a liqueur-like depth. The palate is round and full, with cinnamon, clove and dried fruit carried on a soft sweetness, closing on the balanced acidity and gentle bitterness that mark a well-made rosso. At 16 percent it sits at classic aperitif strength. Serve chilled over ice with an orange twist, neat before a meal or as the base of a Negroni or Manhattan.
