    Vermouth Canasta is produced by Williams & Humbert in Jerez de la Frontera, in Andalusia, and takes its name and character from the bodega's cream sherry tradition. Its base is a blend of Palomino, the dry sherry grape grown on the chalky albariza soils around Jerez, and Pedro Ximénez, sun-dried after harvest to concentrate its sugars into a dark, raisined sweetness. Using a sherry-based wine rather than a neutral white gives the vermouth a nutty, oxidative depth that the standard styles lack, a character shaped by ageing in the region's solera system where wine of different ages is blended and exposed to slow controlled oxidation. The botanical infusion of herbs, spices and wormwood sits on top of this richer foundation. The colour is deep amber. The nose carries raisin, dried fig and walnut over orange peel and dried herbs. The palate is full and sweet, the Pedro Ximénez richness balanced by the bitter botanicals and a long caramelised finish. At 15 percent it is an aperitif with real depth. Serve lightly chilled over ice with an orange twist, before a meal or with aged cheese and nuts.
