Description
This Dunder and Syrup release is part of the Velier linked Providence project at the Distillerie de Port-au-Prince in Haiti, an unaged white made from fresh cane juice rather than molasses and distilled on a pot still. The twist is the use of dunder in distillation, an experiment that nudges the Haitian cane spirit toward the high ester Jamaican style. It is bottled at a bold 56%.
The result is oily and aromatic, sitting between clairin and high ester Jamaican rum. Expect olives, citrus, pineapple, glue and vegetal notes, with the dunder adding a savoury, funky layer over the bright cane base. The palate is full and spicy with overripe fruit, and the finish runs smoky, citrusy and saline. It is characterful enough to sip for those who chase funk, but it truly shines in a Daiquiri or Ti Punch, where its oily intensity and salinity come into their own. A wild, expressive white for drinkers who already love Haitian and Jamaican funk.
