Description
Chelo Clairin Sajous is one of the village rums Velier brought out of Haiti, distilled from fresh-pressed sugar-cane juice rather than molasses and left unaged. Like all clairin it comes from spontaneous, wild fermentation and heirloom cane, which is why it sits so far from a polished sipping rum and so close to the raw, savoury heart of cane spirit. Sajous in particular leans on a saline, olive-brine character that has become its signature.
The nose is unmistakably clairin, chemical and medicinal with iodine and green olive, while the palate turns grassy, herbal and peppery, oily in texture and dry rather than sweet. Bottled at 53.5% with nothing added, it finishes on ester, phenol and that olive note again. This is cane juice at its most uncompromising, rewarding for drinkers who want terroir and funk over comfort, and a natural base for a punchy Ti' Punch.
