Description
Velier's clairin project put Haiti's village rums on the map, and Casimir is one of its flagship producers, working from heirloom cane and spontaneous fermentation in true terroir fashion. This 2017 Ansyen, named for Valentin Norberg, is an aged clairin drawn from a single cask.
Agricole in spirit but Haitian in execution, it is distilled from fresh cane juice and rested just under three years in ex-bourbon barrels before bottling at cask strength. Expect the turbocharged funk typical of clairin, all green cane, olive and earthy intensity, here tempered by oak into something deeper and drier. Bottled unsweetened at 49.8%.
