Description
Velier's Casimir Clairin Ansyen is Haitian cane-juice rum, agricole in spirit if not in name, made in the village clairin tradition of heirloom cane and spontaneous wild fermentation that gives these spirits their wild, untamed character. This single cask spent twenty one months in oak before bottling at full strength, 49.7% and undiluted.
Clairin is distilled from fresh cane juice and fermented with native yeasts rather than cultured strains, which is why even a short-aged example carries so much personality. The nose is vegetal and herbal with bright citrus and a confected edge, while the palate turns sweeter and rounder, herbal still with a darker molasses style depth from the ex-bourbon cask. The finish stays sweet. A characterful, terroir-driven Haitian rum for drinkers who want the raw cane funk rather than polish.
