Description
Valinch & Mallet South Pacific Single Cask FSPD 2004 is a Fijian pot still rum distilled in 2004 at South Pacific Distilleries, aged thirteen years in ex-bourbon and bottled unsweetened at cask strength, 58.5%. Valinch & Mallet present it as a single cask with no compromises, sharp and full of character.
The nose mixes spice and leather with vanilla and raisin, while the palate is punchy and herbal, vanilla and spice carried by a clear alcoholic drive and a note of anise. The finish stays dry and roasted with cocoa and more spice. Pot distillation and the lack of added sugar give it a lean, intense backbone with a distinct South Pacific herbal twist that sets it apart from drier Caribbean cask strength. It makes a powerful evening sipper for drinkers who already enjoy dry, high proof single casks, and it stands up well in a robust Old Fashioned.
