Valinch & Mallet selected this single cask Diamond from 2001 and gave it 18 years of age. Diamond's French metal Savalle still is the lightest and cleanest of the Guyanese stills, though older single casks like this one show how much depth that clean spirit can take on with time in wood.
Drawn from one ex-bourbon cask and bottled unsweetened at 52.5%, it leans dark and roasted: dark chocolate, coffee and toasted wood with dried apricot, plum and molasses, closing dry with a slightly bitter mocha edge. The strength is very approachable for a cask-strength rum, letting the roasted character lead without heat. It sits squarely in the dark, dried-fruit lane of mature Demerara and rewards slow sipping by drinkers who already enjoy the style.
