Valdespino Amontillado Coliseo VORS is a rare old Sherry from Jerez, made from Palomino grown on the Macharnudo Alto plot. Aged over thirty years in solera, it shows orange, wild herbs, dried fruits and spice over a saline, concentrated palate.
Description
Valdespino Amontillado Coliseo VORS is made by Valdespino, one of the oldest houses in the Marco de Jerez, dating to 1875. It is produced from Palomino sourced entirely from the Macharnudo Alto plot, a prized site of white albariza soil, a limestone-rich, chalky earth with high water-holding capacity that sustains the vines through the dry Andalusian summer. An Amontillado begins life under flor, the veil of yeast that ages the wine biologically and protects it from oxygen; once the flor dies back the wine is refortified and continues oxidatively, gaining colour and nutty depth. It is then aged through the criaderas and soleras system, a fractional blending of barrels across rows, for an average of more than thirty years, the VORS designation marking that age. The colour is deep amber-mahogany. The nose is highly complex, showing orange peel, wild herbs, dried fruits and spice. The palate is intense, concentrated and sharp, with pronounced salinity and a very long finish. Serve cool at 13 to 15C in a copita. It suits aged hard cheeses, cured meats, mushroom dishes and rich consommé.
