Cota 45 is the project of Ramiro Ibáñez, an oenologist from Jerez who works across the Sherry Triangle and makes his own wines from an old boat workshop on the beach at Bajo de Guía in Sanlúcar de Barrameda. UBE Miraflores is a still, unfortified white from Palomino, the grape that usually goes into Sherry, here bottled as a table wine to show the character of the albariza soils. Those soils are a bright white chalk that holds winter rain deep in the ground and reflects the strong Andalusian sun, and they give the wine its salinity and mineral cut. The site sits close to the Atlantic, where cool sea breezes hold on to freshness. It is aged eight months in old sherry casks, which are seasoned and neutral, so the wood adds gentle oxygen and texture without flor or fortification. The colour is pale lemon. The nose is subtle, with fresh lemon and lime over chamomile and a saline, chalky note. The palate is dry and taut, briny and mineral, with an almond edge and a long coastal finish. Serve well chilled at 8 to 10 degrees.
