UBE Maína belongs to Ramiro Ibáñez's work at Cota 45 recovering the unfortified white wines of the Marco de Jerez, made long before palomino and fortification came to define the region. La Charanga is drawn from Maína, the sandy arena soils that sit closer to the coast than the classic albariza pagos. Sand drains fast and warms quickly, giving a more open, aromatic style, while the maritime setting brings a constant salt-laden wind off the Atlantic. The wine is a still white, aged under a veil of flor yeast that shields it from air and shapes its flavour. Living on the surface of the wine, the flor consumes oxygen and releases acetaldehyde, building the apple-skin, almond and saline character that marks these wines while keeping colour pale and the palate fresh. Expect a pale lemon colour, a nose of green apple, white flowers and sea spray, and a dry, taut palate with almond and a long saline finish. Serve at 10 to 12 degrees.
