Description
Txakoli Doniene comes from Doniene Gorrondona in Bakio, a valley on the Basque coast set between the low peaks of Sollube and Jata, within D.O. Bizkaiko Txakolina. The estate farms 12 hectares organically on steep, south facing slopes, including a rare two hectare plot of pre phylloxera vines. The wine is made from Hondarrabi Zuri, the region's native white grape, grown on sandy soils in a cool, wet Atlantic climate right by the sea. That maritime setting is the key to the style: high rainfall and moderate ripening keep acidity sharp and alcohol low, while the coastal exposure lends a salty, sea spray character. This is a young wine made to be drunk fresh, vinified in stainless steel to protect its bright aromatics, with no oak. Txakoli is traditionally served with a slight spritz, poured from a height to lift the wine. The colour is very pale with green glints. The nose is fresh and zesty, showing green apple, lemon and white flowers over a distinct briny note. The palate is bone dry and racy, with citrus and a saline grip framed by piercing acidity on a short, clean finish. Serve well chilled at 8 to 10 degrees.
