    Cane And Grain selected this Tullibardine, an 8 year old Highland malt from 2015, drawn from cask 3381 and bottled at 57.8%. The outturn was 235 bottles. Founded in 1949 in the southern Highlands near Gleneagles, Tullibardine is a soft, honeyed Highland malt. It is one of few distilleries to distil, mature and bottle all on the one site.

    The spirit was run through the distillery's compact copper stills, to build a honeyed, malty character. A sherry butt held it, the wood lending raisin and walnut. At this age the spirit is fresh and honeyed, the malt and soft fruit bright. Soft Ochil Hills water gives a clean, malty make. Picard is a Burgundy wine family, and their casks come from vineyards across France. The name comes from the Gaelic for lookout hill, after a hill once used to watch for strangers. It is one of few distilleries to distil, mature and bottle entirely on the one site.

    At cask strength 57.8% it is full bodied. The Oloroso brings dried fruit, fig and a nutty depth, and a soft, fruity vanilla meet soft vanilla and honey from the cask. Beneath it run honey, toffee and a soft spice. It finishes soft, honeyed and clean. This is a soft, honeyed Highland single malt.
