Celler Tuets sits in Alt Camp, inland Catalonia, where young winemaker Albert Domingo farms organically and works with minimal intervention. Tot Vermell is a field blend of local red and white varieties, certified natural, organic and vegan. The Mediterranean climate here is tempered by altitude and the cooling influence of nearby hills, which preserves acidity and aromatic freshness in the fruit. After a gentle pressing the wine spends roughly eight months in stainless steel, a neutral vessel that holds the primary fruit and keeps the colour pale. Working without added inputs leaves a little extra texture and a savoury, slightly wild character that marks the natural approach. The wine is pale pink with a faint orange tint. The nose carries red berries, cherry and citrus peel over white flowers, with an earthy, saline undertone. The palate is dry and crisp, light in body, with a savoury grip and a mineral finish rather than overt sweetness. Serve well chilled at around 8 to 10 degrees in a standard white wine glass. It suits light summer plates, fresh salads and grilled vegetables, and works as an aperitif on a warm afternoon.
