    Vinos A Tresbolillo work in D.O. Ribera del Duero, the high plateau of Castilla y Leon where Tempranillo is known locally as Tinto Fino. The vineyards sit at altitude on the meseta, where blazing summer days and sharply cold nights create a wide diurnal range. This swing is the key to the region's reds, slowing ripening so the grapes build colour, tannin and dark fruit while holding firm acidity. The poor limestone and clay soils keep yields low and concentrate the fruit. After fermentation the wine spends seven months in oak barrels, a measured ageing that softens the tannins and adds vanilla and spice while keeping the focus on the variety's dark fruit. The result is a deeply coloured young red with plum, black cherry and liquorice, framed by oak spice and a stony, earthy minerality. The palate is full bodied with firm, fine tannins and a fresh, peppery finish that reflects the cool nights. Serve at 16 to 18 degrees and decant young bottles. It is a natural partner for roast lamb and grilled red meat.
