Trois Rivières is a Martinique estate with roots back to 1660, and this cane-juice rhum agricole sits firmly in the AOC tradition, distilled on a creole column at low strength to keep the grassy, vegetal character that molasses rum loses. The quirk here is the reduction, brought down with sea water, which threads a distinct marine salinity through the spirit.
Fresh cane juice fermented and distilled within hours of cutting gives the herbaceous, mineral backbone, and the AOC forbids any added sugar, so this is dry by rule and by design. Aromas run to sugarcane, wood and pear with the agricole snap, and the palate is salty and spicy over that cane core, finishing toasted, woody and saline. At 54% it has the higher strength agricole drinkers expect, a characterful pour neat, alongside oysters, or as a savoury twist on a Ti Punch.
