Description
Trimbach has made wine in the medieval town of Ribeauvillé since 1626, with 13 generations of the family at the helm and a house style built on dry, structured, long-lived whites. This single-variety Riesling is the entry to that range and is raised in stainless steel rather than old foudres, a deliberate choice that keeps the fruit precise and the wine cleanly dry. Alsace lies in the rain shadow of the Vosges mountains, one of the driest wine regions in France, and its patchwork of granite, limestone and sandstone soils gives Riesling both aromatic lift and a mineral backbone. Cool nights hold the grape's naturally high acidity, the trait that lets it age for years. Fermentation is slow and cool, taken to full dryness, with no oak influence to mask the variety. The colour is pale with a green tint. The nose is precise, with lemon, green apple and white flowers over a faint saline note, and the palate is dry and tightly framed, its acidity carrying a long citrus finish. Serve chilled at 8 to 10 degrees. It is a natural match for white fish, shellfish, choucroute and lighter pork.
