Tiburon comes from Travellers Liquors in Belize City, the country's leading distillery, and is made from molasses then aged four years in ex-bourbon casks. It sits in the gentle, approachable Central American mould, a column-driven style where the barrel rather than the spirit does most of the talking.
At 40% this should be soft and rounded, with the vanilla, light caramel and mild oak spice that ex-bourbon ageing typically gives a young molasses rum. Expect an easy everyday pour that works neat over ice or in a simple rum cocktail, rather than a heavy, high-ester style.
