Tr3smano Proventus is a Ribera del Duero Tempranillo from a project led by Fernando Remírez de Ganuza and two partners. Aged twelve months in oak, it shows ripe plum, black cherry and sweet spice over firm, structured tannin.
Description
Lagar Tr3smano makes Proventus in D.O. Ribera del Duero, a project founded by three partners, Fernando Remírez de Ganuza, Pedro Aibar and José Ramón Ruiz, whose name plays on the old Castilian sense of something distant and out of reach. This is a pure Tempranillo, the local Tinto Fino, from the high plateau where chalk and gravel soils drain freely and the wide swing between hot days and cold nights slows ripening, holding acidity and colour while the fruit concentrates. After fermentation the wine completes malolactic conversion to soften its natural acidity, then ages twelve months in oak barrels. That barrel time draws gentle oxygen through the wood, fixing colour, knitting tannin and layering vanilla and sweet spice over the dark fruit. The wine is deep and dense in the glass. The nose leads with ripe plum, black cherry and redcurrant, then tobacco and sweet spice from the oak. The palate is full and structured, with firm, ripe tannin, fresh acidity and a long, savoury finish. Serve at 16 to 18C and decant an hour ahead. It suits roast and grilled red meats and aged cheese.
