Toucan draws on the Saint Maurice distillery in French Guiana for this Selection Limitee, released with La Confrerie du Rhum and made in the agricole manner from fresh pressed sugar cane juice. Distilled on a column still and bottled unaged at a fierce 60%, it is built for impact rather than contemplation, the high proof typical of a young cane juice blanc.

The nose is fresh and green, all lime, cane and vegetal notes, and the palate wakes up with sugar cane, pepper and a citrus rush carried by serious heat. The finish stays dry, salty and fresh. Neat it is intensely lemony and demanding, but it comes into its own in a glass of punch or a citrus forward cocktail, where its cane and lime drive give real lift.
