Description
Torres, the family firm best known for its work in Penedes, sources this Verdejo from vineyards on an elevated plateau in the Rueda appellation of Castilla y Leon. The zone sits high on the northern Spanish meseta, where warm days and cold nights slow ripening and lock in the natural acidity that defines Verdejo. Free-draining gravel and limestone soils keep vine vigour in check and push the roots down for water, concentrating aroma in the fruit. After a manual sorting the must is fermented at controlled low temperature in large stainless steel tanks, a method chosen to protect the grape's delicate aromatics and avoid any oak influence. The wine is pale straw with green tints. The nose leads on pear and green apple with lemon and a note of white flowers, while the palate is dry and lightly textured with a bitter almond twist on the close that is typical of the grape. Acidity carries a clean, saline finish. Serve well chilled at 8 to 10 degrees in a standard white glass. It works as an aperitif and alongside grilled prawns, fresh goat cheese or a simple green salad.
