Description
Gran Coronas Reserva is a red wine from D.O. Penedès in Catalonia made by Torres, a blend of Cabernet Sauvignon at around 85 percent with Tempranillo. The Cabernet comes from vines Miguel A. Torres planted in Penedès more than forty years ago, a bold move at the time that proved well suited to the site. Penedès has a Mediterranean climate cooled by sea breezes and altitude, which slows ripening so the Cabernet retains acidity and firm structure. After harvest the fruit is destemmed and cold macerated before fermentation, a pre fermentation soak that draws out colour and aroma without harsh tannin, then fermented at controlled temperatures to keep the fruit clean. Around twelve months in oak softens the tannins through gentle oxidation and adds cedar and vanilla. It is deep ruby, the nose offering blackcurrant, dark cherry and plum with tobacco, cocoa and dried herbs, the palate medium to full bodied, savoury and structured, finishing on fine tannin and oak spice. Serve at 16 to 18 degrees and decant ahead. It suits roast and grilled red meats and aged cheeses.
