    Single malt Tormore, an independent Hunter Laing bottling, a 33 year old release from 1988 and bottled at 49.1%. Just 238 bottles were filled. Set on the A95 in the heart of Speyside, Tormore has distilled since 1960. The granite buildings carry copper roofs and a musical clock that plays four Scottish songs each quarter hour.

    Distilled in swan neck stills fitted with purifiers, on soft Achvochkie Burn water, giving the structured, nutty Speyside spirit. Maturation in a sherry cask laid dried fruit over the nutty malt. Very old Tormore turns profound, waxy and nutty yet still clean. A slightly oily texture carries the cask flavour over the clean spirit. Elixir Distillers bought Tormore in 2022 and are reviving it as a single malt brand. Most of the spirit matures off site, much of it in refill ex-Bourbon wood. The distillery sits near Grantown-on-Spey, in sight of the Cromdale Hills.

    Undiluted at 49.1%, it is layered. Raisin and a nutty sherry depth build, and the refill oak lending honey and vanilla runs under green apple, nut and a soft spice. It is fine and nutty, the fruit and oak well matched. A gently drying, nutty finish lingers. This is a light, almond edged Speyside single malt.
