Topanito Blanco is a Blue Weber tequila made at the Casa Maestri distillery in the town of Tequila, in the Jalisco lowlands, and produced by hand. It is a clear, agave forward base tequila bottled at 40%, built as a foundation for cocktails such as the Margarita, Tequila Sunrise or Paloma, with a stronger sibling blanco also in the range.
Production starts with a slow cook of the agave hearts in brick ovens rather than the faster industrial route, followed by fermentation with natural yeast cultures and a gentle double distillation in copper pot stills, where copper rounds the spirit. The result is fruity and a little sour with a clear agave presence, showing green apple and grapefruit and a light bitter edge over fruity sweetness. It is a straightforward, mixable blanco that keeps the cooked agave and brick oven character intact.
