Description
An official Tomatin single malt, a 50 year old release from 1971, drawn from cask 30040 and bottled at 44%. Just 125 bottles were filled. Founded in 1897 high in the Monadhliath hills, Tomatin makes a soft, fruity Highland single malt. Water comes from the Allt na Frithe, the burn of the deer, in the Monadhliath hills.
It was drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. A sherry butt held it, the wood lending raisin and walnut. Very old Tomatin turns soft and profound, the fruit deep and the oak polished. The mellow make leans on the cask for much of its colour and flavour. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond.
Reduced to 44%, it is soft. A soft, fruity sweetness, and the Oloroso brings dried fruit, fig and a nutty depth. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
