    An official Tomatin single malt matured to 20 year old from 1999, drawn from cask 34159 and bottled at 53%. A release of 232 bottles. Tomatin is the soft, fruity Highland malt of a distillery founded in 1897 near Inverness. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Distilled from unpeated malt in copper stills on Allt na Frithe water, giving the light, mellow spirit at its heart. A refill bourbon cask held it, keeping the fruit to the fore. Beyond twenty years the malt grows deep and honeyed, dried fruit and oak spice over orchard fruit. A patient maturation suits the soft, fruity Tomatin character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land.

    At a natural 53% it is full and fruity. Apple, pear and a soft honey, and the refill bourbon lends a quiet vanilla. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
