Description
An official Tomatin single malt, a 13 year old release from 2009, drawn from cask 3505 and bottled at 60.3%. The outturn was 286 bottles. Tomatin is the soft, fruity Highland malt of a distillery founded in 1897 near Inverness. By 1974 Tomatin ran twenty three stills and was the largest malt distillery in Scotland.
It was made in copper stills from unpeated barley, for a fruity, mellow make. It was matured in ex-Bourbon oak, lending vanilla and a soft honey. Around the mid teens the malt gains a fuller honey and ripe fruit. Sherry wood suits the soft make, lending dried fruit and a nutty depth. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character.
Bottled at a cask strength 60.3%, it is rich. Pear, honey and a malty note, and the bourbon cask adds vanilla and a gentle sweetness. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
