Description
This official Tomatin single malt, aged 13 year old from 2005, drawn from cask 2681 and bottled at 60.1%. The outturn was 212 bottles. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. The distillery was founded in 1897 by a local company, taking its name from the village, Gaelic for hill of the juniper.
The spirit was run through the distillery's onion stills after a long fermentation, to build a fruity, gently spiced character. It rested in ex-Bourbon oak for a honeyed sweetness. Mid age brings a deeper honey and a riper orchard fruit. The soft, fruity spirit takes cask character readily across maturation. For most of its life the distillery rarely ran to its full capacity. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above.
At a natural 60.1% it is full and fruity. Orchard fruit and a gentle malt, and the refill bourbon lends a quiet vanilla. A baked apple and a gentle spice lift it. It finishes soft, fruity and clean. This is the softer side of the Highlands.
