Description
This official Tomatin single malt, an 11 year old from 2009, drawn from cask 3383 and bottled at 51%. Only 423 bottles were released. Tomatin, founded in 1897 in the Highland village of the same name, was once Scotland's largest malt distillery. It was bought in 1986 by Takara Shuzo of Japan, the first Scotch distillery in Japanese hands.
Worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. Ex-Bourbon casks held it, soft oak that lets the fruit lead. Younger here, it keeps a light, fruity freshness over soft honey. Refill oak lets the fruity Tomatin character lead, apple over honey. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery.
At 51%, undiluted, it is deep and fruity. A mellow, fruity character, and vanilla and a soft oak come from the bourbon wood. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is the soft, fruity Highland malt of Tomatin.
