    From Jack Wiebers Whisky World comes this Tomatin, a 7 year old from 2011, drawn from cask 029 and bottled at 57.5%. 150 bottles in all. Tomatin, founded in 1897 in the Highland village of the same name, was once Scotland's largest malt distillery. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. A refill bourbon cask held it, keeping the fruit to the fore. Still young, the malt is fruity and mellow with a gentle spice. The mellow make leans on the cask for much of its colour and flavour. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery. The arrival of the Highland Railway in the 1890s made the distillery possible.

    At 57.5%, undiluted, it is deep and fruity. A soft, fruity sweetness, and vanilla and a soft oak come from the bourbon wood. A dried fruit and a soft oak give it depth. Apple, honey and a soft oak see out the finish. This is a fruity Highland single malt from the Monadhliath hills.
