Tomatin 36 Years Old Cask #Batch 3

An official Tomatin single malt, aged 36 year old, drawn from cask Batch 3 and bottled at 46%. Just 800 bottles were filled. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. It was bought in 1986 by Takara Shuzo of Japan, the first Scotch distillery in Japanese hands.

Drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. A sherry butt held it, the wood lending raisin and walnut. At over thirty years it is rich and mellow, tropical fruit, honey and old oak. The mellow make leans on the cask for much of its colour and flavour. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond.

At 46% it is gentle, fruity and mellow. A soft, fruity sweetness, and sherried dried fruit and a nutty edge come through. The mouthfeel is soft, the fruit carried on a mellow body. A long, honeyed finish carries a fruity lift. This is a gentle, fruity Highland single malt.
