Description
Single malt Tomatin, an independent Dramfool bottling matured to 26 year old from 1994, drawn from cask 11210 and bottled at 50.1%. A release of 74 bottles. Founded in 1897 high in the Monadhliath hills, Tomatin makes a soft, fruity Highland single malt. Today it works twelve stills, having shifted from blend volume to single malt.
The spirit was distilled slowly for the soft, fruity Tomatin make, building the approachable Tomatin style. It rested in ex-Bourbon oak for a honeyed sweetness. Past twenty years the spirit turns honeyed and full while staying soft. Long, gentle ageing turns the fresh fruit towards honey and soft spice. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness.
At a full 50.1% it is bold yet fruity. Apple, vanilla and a light spice, and ex-Bourbon oak gives vanilla and a light apple. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is the soft, fruity Highland malt of Tomatin.
