    Single malt Tomatin, an independent Daily Dram bottling, a 23 year old Highland malt from 1997 and bottled at 52.7%. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. An ex-Bourbon barrel shaped it, vanilla beneath the orchard fruit. Long ageing brings a deeper dried fruit character and a soft oak spice. Refill oak lets the fruity Tomatin character lead, apple over honey. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery.

    At a natural 52.7% it is full and fruity. A mellow, fruity character, and the refill bourbon lends a quiet vanilla. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is the soft, fruity Highland malt of Tomatin.
